Layered Moroccan Curried Ground Round Bowl

Ingredients

2 tbsp (30 mL) olive oil
1 pkg (340 g) Yves Veggie Cuisine® Original Ground Round
1 tbsp (15 mL) ras al hanout spice blend
1/2 tsp (2 mL) salt, divided
1 pkg (240 g) Yves Veggie Cuisine® Sweet Potato and Chia Bites
1 pkg (283 g) Casbah® Organic Whole Wheat Couscous
1/2 cup (125 mL) caramelized onions
1/4 cup (60 mL) finely chopped apricots 2 tbsp (30 mL) finely chopped fresh parsley
4 orange slices, for garnishing
1/4 cup (60 mL) pumpkin seeds, for garnishing

Directions

1. Heat oil in skillet set over medium heat; cook Yves Veggie Cuisine® Original Ground Round, ras al hanout and half of the salt for 3 to 5 minutes or until browned.

2. Meanwhile, cook Yves Veggie Cuisine® Sweet Potato and Chia Bites according to package directions.

3. Cook Casbah® Organic Whole Wheat Couscous according to package directions; stir in onions, apricots, parsley and remaining salt.

4. Divide Yves Veggie Cuisine® Original Ground Round mixture among 4 bowls. Layer Yves Veggie Cuisine® Sweet Potato and Chia Bites and caramelized onion mixture over top. Garnish with orange slices and pumpkin seeds.
