Apple and Sage Sausages with Apples and Onion

1 tbsp (15 mL) Spectrum Naturals® Canola Oil
1 medium red onion, halved and sliced
1 clove garlic, minced
1 pkg (380 g) Yves Veggie Cuisine® Bavarian Veggie Sausages
2 apples, peeled and thinly sliced
1/3 cup (75 mL) Imagine® Organic Vegetable Broth
1/4 tsp (1 mL) dried thyme
1 pkg (500 g) Europe’s Best® Green and Yellow Beans
1 pkg (400 g) Europe’s Best® Roasted Gourmet Fire Roasted Sweet Potato Slices


  1. Heat oil in a large skillet with a lid, over medium heat. Add onion; cook, stirring, for 6 minutes, until soft. Stir in garlic, cook for 1 minute.
  2. Add sausages and brown lightly on all sides.
  3. Stir in apples, broth and thyme. Cover and cook until apples are soft, about 7 minutes.
  4. Serve with cooked beans and sweet potatoes.
