Creamy Banana Bread Oatmeal

3 cups (750 mL) Rice Dream® rice drink
2 tbsp (30 mL) brown sugar
1/2 tsp (2 mL) cinnamon
1/4 tsp (1 mL) nutmeg
1/4 tsp (1 mL) salt
1 1/2 cups (375 mL) large flake oats
1 banana, mashed
1/2 cup (125 mL) toasted chopped pecans, divided
1 banana, sliced
1. Bring Rice Dream, sugar, cinnamon, nutmeg and salt to simmer in saucepan set over medium heat. Stir in oats and reduce heat to medium-low.
2. Cover and cook, stirring occasionally, for 5 to 7 minutes or until slightly tender and most of the liquid is absorbed. Let stand, covered, for about 5 minutes or until desired consistency. Stir in mashed banana and half of the pecans.
3. Divide among bowls. Top with sliced banana and remaining pecans.
Replace brown sugar with maple syrup or honey if desired.
Replace pecans with toasted walnuts.
Replace pecans with toasted coconut flakes for a nut-free alternative.
Add chocolate chips for a chocolate banana Loaf.
